I was craving for some halo-halo or halo halo and some banana lumpia and of course don’t forget the leche flan and the kakanin, hotguam.com led me to Cabalen. I once visited one of Guam Filipino Restaurants called Ben N Yan, they serve their food on a hot sizzling plate. It was awesome! I felt like I was really dining in the Philippines. Did you know Guam is over populated by filipinos? Maybe not. Just an assumption. It sure does look like it. There are so many filipino restaurants in every corner of the island its pretty awesome. Now what I would like to know is where to find a Guam Filipino Restaurant that cater Lechon Baboy. If you don’t know what that is when the pig is cooked by skewering the entire animal, entrails removed, on a large stick and cooking it in a pit filled with charcoal. The meat is placed over the charcoal, turning the stick in a rotisserie action. The meat is roasted on all sides for several hours until done. The process of cooking and basting usually lends itself to a crisp skin, which is also served with the meat. The skin is everyone’s favorite part because it crunchy and flavorful. Filipinos make the best Lechon hands down!
